The delicious flavour of the ginger and sesame dressing gives ordinary salad vegetables an oriental feel. It is ideal served with Chinese chicken wings, or pork ribs in hoisin sauce. For extra flavour and crunchiness why not try using your own home-grown organic beansprouts? These quantities serve 4 as a side salad.

Ingredients
◆  4 Celery sticks
◆   4 Carrots, peeled
◆   1/2 Cucumber
◆   100g Beansprouts
◆  6 Spring onions, trimmed
◆  4 Chinese leaves
◆  3 cm Fresh ginger, peeled and finely chopped
◆  1 Red chilli, finely chopped
◆  1 tbsp Brown sugar
◆  3 tbsp Wine vinegar
◆  1 tbsp Peanut oil
◆  1 tbsp Toasted sesame seeds
Method
◆  Place the chilli, oil, ginger, vinegar and sugar into a jug and mix thoroughly.
◆  Cut the carrot, celery, spring onion and cucumber into julienne strips (matchsticks).
◆  Mix the cut vegetables with the beansprouts and drizzle the dressing over the top.
◆  Place the vegetables into the chinese leaves, such that you have “boats of salad” and sprinkle the sesame seeds   over the top. Serve immediately.
